BBQ Shrimp Flatbread Pizza

I am a blog person. Not just because I have a blog, but because I am *obsessed* with blogs. I love them. I talk about the people who write certain blogs almost as though I know them (thankfully, I have very understanding friends), and I never cease to be inspired in different ways by the online content I consume. I would venture so far as to say that blogs (and the internet, by extension) have taught me many of the life lessons of my adult life, and helped improve my quality of life tenfold.

Case in point: this pizza. Holy. Moly. Guacamole. Well, let’s put it this way: in all the years of knowing my BFF, and all the food I’ve ever fed her (cookies, cakes, savouries), this is the very first recipe that she loved so much she bought all the ingredients for herself and made it at her own house. So far, I’ve made and eaten this pizza/flatbread/pile of awesome on 4 separate occasions. Hmm.

I blame (and also thoroughly thank) Jessica from How Sweet Eats. That woman is the very best kind of crazy. She comes up with recipes I never ever would have imagined…ever. Today, for example, there is a new recipe for hot blueberry cheddar dip. (What?) But I have pinned a huge number of her recipes, because she’s just amazing. Go to her blog, scroll those archives, have happy food dreams.

And make this pizza. It’s so easy. It’s so good. It’s a crowd-pleaser. And, happily, it’s based around the vegetables and cheeses that I tend to have hanging out in my fridge! Win/win/win.

Disclaimer: there is a “flatbread” dough to make, but do not let those words intimidate you. I promise you will be in awe of how easy it is. Each time I make it, the aforementioned BFF goes “wait, that’s it?”. And I nod sagely. With flour on my face, undoubtedly.

Here is the recipe! Sally forth and tally ho and make this, hop to! You will not regret your decision.

Ps. Don’t forget handfuls of cilantro and big squeezes of lime. That stuff is make-or-break, savvy? xo.

22 Before 22: Make Sushi

Remember my birthday list? Well, I’m pleased to report that in just a few months of being 21 I’ve checked a couple biggies off. I have the podcast up and running, I’ve corresponded twice already with my pen pal, I’m halfway through Pride and Prejudice, and my friend and I have grown basil and cherry tomatoes – I just have to put some photos up for posterity!

And then, of course, are the “make” goals: I tend to make the quickest progress with those, for some reason. Cinnamon buns, check! And now: sushi. I loved the process of making both these, and I’m hoping that when I make cheese, it will be equally fun.

My friend Billy (longtime fan of my blog, awesome Ultimate Frisbee player and sushi master extraordinaire) offered to bring the supplies for sushi creation to a potluck that another friend was having. I leaped at the idea, and found myself making my very own sushi (and eating a lot of his). I bought calrose (aka sushi) rice at the grocery store yesterday, and am really looking forward to making more sushi sometime soon.

I learned a couple important things about the process. First, the rice should be (if possible) not too sticky. We added rice vinegar to ours, and I think that helped. Second, adding brie cheese into the rolls is a revelation! Seriously, try it and see for yourself. Brie/mango? Perfect. I also learned that you should not be afraid of pressing hard when you’re rolling, and that a recently-sharpened knife will really help in slicing perfectly. Finally, rolling the nori sheets around the rice and filling is infinitely easier than rolling the rice around the nori and filling. Even if it’s a little less pretty, perhaps.

So much fun. I’m so happy that I’ve done this one! Now back to reading Austen.

Have a wonderful Monday everyone!

xo.

Project 365: Week 26

My dad’s been in town for the last few days: you’ll see him pop up in these photos a couple times. We had fun – lots of dinners, lots of Jazz Fest, lots of walking around. I’m totally exhausted and ready for a big sleep in tomorrow morning. Summers in Montreal are so beautiful, not only because they just are, but because friends and family tend to visit more often, which is wonderful.

But after all that delicious (and rich) food, my body is craving greens, smoothies, green smoothies, salad, etc. We’ll see how long that’ll last, I suppose!

Are you gearing up for a beautiful weekend? I hope so! Enjoy that sunshine.

The Book Learning Podcast: #3

Hey beautiful people! In case you hadn’t heard, episode 3 of the best writing podcast ever is out and ready for your earbuds.

As always, the podcast (subscribe on iTunes here!) is a conversation between my friend Gabrielle and I, about writing and reading, and all things book learnin’! We have fun.

This week in particular, we’re covering part two of our “Beginner Writer’s Toolbox” miniseries, and we discuss three important things that new writers sometimes struggle with:

  • Finding a work environment or system that works for you
  • Getting inspired or finding ideas to write about
  • Setting goals and writing schedules
And of course, we tell you what we’re reading! We are both pretty excited about our books, so if you’re looking for an excellent read, look no further.

The podcast is an hour long this time (!) but I promise it’s jam-packed full of good tips and quotes and motivation. You’ll be writing again in no time! Give it a listen, and let me know what you think, either here in the comments, on the Youtube video, or on iTunes. And if you feel like it, ask us a question, or perhaps make a suggestion for a future podcast topic.

Thanks for listening! We appreciate each and every one of you.

Now get out there and enjoy the sunshine! But take us with you in your headphones, okay? Ciao, bellas.
