Happy Anniversary!

I just realized that today marks a year to the day that I launched Life In Limbo on its own domain. March 7! (Here’s that very first post.) Wow. So much has happened in a year. It’s incredible how different I feel from the completely terrified girl who launched this website a year ago today. I’m blogging from a new apartment and a happier perspective. I’ve made some lovely Internet friends! I’ve had lots of unexpected (and positive) responses, and learned more than I dreamt I would in a year. I’ve dealt with Texan customer service agents from BlueHost, fixed bugs, Googled the crap out of things I didn’t know so that I could make this website everything I wanted it to be.

I want to THANK YOU. All of you. Anyone who is reading this. You have no idea how much it means to me that people enjoy + take something away from what I put up on the internet. It makes me furiously happy. I’d probably still be posting all my thoughts and photographs even if nobody was reading, but I’m still overjoyed every time I get a comment. (You have no idea how much each comment makes my day.) So to everyone reading: thanks, wholeheartedly.

Happy birthday, Life In Limbo. Keep on keepin’ on!

xo.

PS. March also marks three years since I started blogging here. Which seems crazy!

Honey Cornbread Muffins

We’re having a drop-dead gorgeous day today. The weather is spectacular. It’s the first time in months that I’ve enjoyed my quasi-daily walk outdoors – in fact, Monday’s walk so brutal I considered turning back after less than a block. I spent much of my time outside just revelling in the warm (ish) breeze, really just enjoying every second of it. It’s amazing what weather and sunshine can do for my psyche. Best medicine. If you’ve been cooped up all day, RUN, don’t walk to your nearest exit and get out into that beautiful fresh air.

Now to business. Muffin business. Does that sound risqué? No? Okay, I guess it’s just me then. Maybe it’s because I’ve eaten approximately 4 of them in less than 24 hours (sorry I’m not sorry), so I know that they really are risqué, and sinfully good. I used a heaping teaspoon of coarse sea salt, and it was the best idea I’ve had all week. I used the full amount of sugar and honey. I’ve been spreading them with butter, and dipping them in cheese-strewn minestrone soup. I also ate one for breakfast. I also ate one as a snack. Such is the blessing and the curse of living alone.

I first spotted these on Elise’s blog, and when I felt like baking something quickly last night they were the perfect recipe to make. I haven’t baked since I was home over reading week, and I actually got a little tingle of happiness when I pulled out my brightly coloured bowls and old wooden spoons. I can’t explain my love for baking. It runs in my family.

These muffins are really delicious. The sugar and salt probably help with that a lot, but their texture is really nice as well. I remember growing up our cornbread would always be crumbly (and I like it that way too!) but in the muffin form it holds up pretty well.

The original recipe is here.

PS. I’m not counting this toward my 2012 bread goal, because it doesn’t use yeast.

Read This Book: Ready Player One by Ernest Cline

Remember in elementary school, when there was D.E.A.R. time? As in, drop everything and read? I think it was created for books like this one.

I had been meaning to pick up this title for a while, ever since that book preview I stumbled into. This book was highly recommended, and was listed along with several other amazing upcoming titles on a handy-dandy little powerpoint slide printout.

I have since learned two things: 1. I must never again miss a book preview, because the books they recommend are pure gold; and 2. I must never again lose the powerpoint slide printouts they give out. Which I did. I have been ransacking my room for the past few days, looking for it desperately. Mainly because, if the rest of the books on that list are as good as The Night Circus and Ready Player One, I will have an outstanding year of reading.

Like The Night Circus, I read this book in about 3 days. No, I didn’t completely neglect my homework, but I did stay up a bit later and choose to read instead of watch TV (a very rare event). It’s that good.

Project 365: Week 8

I love the progress I’m making with Project 365! I always worry I’m “slacking off” each day and not capturing a nice moment, but I also always forget how long the days are and how many surprises end up being in store. Plus, no matter how I feel about the photos at the time, I always like them much more once I see them on my computer a few days later. (Lesson here? Things always seem better a few days later?) Anyways, I’m still enjoying it a ton. I hope to get more inspired as the weather turns warmer and the weeks of school become less and less! Happy Thursday.

As always, check out the Flickr set of all the project 365 photos here.
