White Bean Garlic Dip and Homemade Tortillas

GPG TortillasI’m over at Guinea Pigging Green today with the recipe for a delicious white bean garlic dip I threw together last week. It wound up being so yummy I just had to share it! No doubt it can be improved upon (my tiny Korean kitchen, while growing, is still not completely stocked) but it was the perfect addition to some light, fresh veggie wraps.

The same day, I made tortillas by hand for the first time. At the risk of sounding like a complete and total loser: it was so much fun! Not only did I feel like a domestic goddess extraordinaire, but the tortillas were so tasty and came out perfectly. I was following a recipe from Oh She Glows (all of her recipes are always awesome) using regular flour instead of the spelt flour she recommends.

You would have laughed to see me – I was covered from head to toe in flour, rolling out tortillas using my water bottle then whipping around to drop them into my little frying pan, doing a little dance back and forth the whole time. But it was fun. So far, my 24 before 24 list has been feeding me well – literally and figuratively!

Listening to my favourite podcasts every day on my walk and the Lana Del Rey album when I do errands.

Watching The Good Wife and loving it.

Appreciating all the beautiful Spring flowers blooming. I notice new ones appearing every day.

Missing my family and friends back home a little today, but…

Grateful (very) for the friends I’ve made here.

Putting pumpkin seeds in my morning granola.

Still obsessed with the beach and the waves.

Creating a lot more lately (blogging, podcasting, photographing, writing) and feeling excited about that.

Eating rice or quinoa bowls most nights.

Pinning lots of inspiration and yummy recipes to try.

Jumping around like a maniac doing Jillian Michaels 30 Day Shred in my apartment after work these days.

Resolving to read more and read better, more interesting books.

Already planning for a restful, quiet weekend.

Working on staying present and grounded instead of being nostalgic for another place.

Impressed with myself that I’ve managed to create a life and routine here in Korea (!?) after a relatively short amount of time. I feel miles away from where I was in my last Currently post.

Loving the people I’m lucky enough to know, as always and for forever.

The 24 List

Two years ago, I wrote a list of 22 things I wanted to do before I turned 22. I loved the idea and the project, and some of my favourite memories of that year were sparked by the 22 before 22 list: creating a book club, making a podcast, sewing a dress, running a race. I didn’t make a list last year, mostly because the year was a bit strange for me between travelling for 3 months in Europe, living at home deciding my next steps, and ultimately moving to Korea. Since I didn’t know what the year would look like in terms of my routine or physical environment, I didn’t feel inspired to set goals. This year, I feel more settled and I have a pretty good vision of what 23 will look like, which means I’m feeling excited to start a new project.

These goals are all things I think will make my life richer, happier, and more fun. They’re meant to inspire me to have more adventures and experience more joy. They’re not meant to make me feel stressed out trying to check them all off. On the 22 list, I only completed 12 of my goals, and while I (of course) hope to cross more off this list, I’m approaching it with a very fun and relaxed attitude. So here we go, 23! Let’s see how many of these I can do before I turn 24.
